SPARKLING DARJEELING ROASTED PEAR

A GOLDEN RECIPE
This recipe screams weekend all over it! It is a seriously gorgeous cocktail and we are pretty sure that it’s worth the effort to try it out. It tastes amazing with its pear puree, honey notes and Yeh Tea Darjeeling. Anyhow…cocktail or mocktail it doesn’t really matter, this recipe is GOLD in all its versions! Are you ready to party?

Here’s how to make it.⠀⠀


INGREDIENTS (x1):⠀⠀
50ml Yeh Tea Darjeeling Teapresso
150ml fresh roasted pears
25ml grapefruit juice
75ml sprankling alcohol-free white wine
Garnish with lemon juice, brown sugar, ground cinnamon and fresh camomile flowers⠀⠀

For the roasted pears:
• 6 pears, slice in half
• 1 tablespoon honey
• 1 tablespoon balsamic vinegar
• 1/4 tablespoon ground cinnamon
• pinch nutmeg & ground clove⠀

For the puree:
• 1 teaspoon vanilla extract
• 2 tablespoons water

Pimp to Cocktail (optional):
champagne
sparkling wine

TOOLS:⠀
Mug & paper filter
Bowl and blender
Cocktail shaker
High glass/coup (capacity 50ml) – 6 in total⠀

DIRECTIONS:⠀⠀
1. Yeh Teaspresso – Pour 2 teaspoons of Yeh Tea Darjeeling loose tea in a paper filter and add 50ml of 95 Degrees Celsius. Let it steep until cooled off.⠀⠀

2. Yeh Tea Cream Layer – Take a heat resistant plate and put the pears (sliced in half) in. Add honey, balsamic vinegar, cinnamon, nutmeg and clove. Mix and place it in a pre-heated oven of 200 Degrees Celsius for 20 to 25 minutes, until soft. Purée the pears with vanilla and water. Leave it to cool.

3. Mocktail – Add in a cocktail shaker or a jar the Teaspresso, roasted pear smoothie, alcohol-free white wine and grapefruit juice and shake vigorously. If you like extra sweetness, add one shot of sugar or a sweetener of your choice.

Pimp to cocktail:⠀⠀
Replace the alcoholfree drinks with champagne and sprankling white wine.⠀

4. Mix the brown sugar and cinnamon in a plate. Take (6) nice high small glasses/coups (capacity 50ml). Make the rim wet with lemonjuice, hold upside down and press in the plate with the mix. Pour the mocktail in gently without touching the rims.⠀⠀

5. Garnish with fresh camomile flowers Et voilà! Enjoy!
